Dinner=
- Sesame ezekiel toast with avocado, sea salt, black pepper and lots of chickpeas.
- Salad consisting of mixed baby greens, cucumber, tomato, purple onion, hemp hearts, and organic vinaigrette.
- One egg and 1/2 c. egg white scrambled then topped with spicy sprouts and smoked paprika.

Chocolate peanut butter banana bread. It’s whole grain and vegan to boot.
It is the perfect Abi bread because it is super hardy, dense and peanut buttery. But, it is not at all sweet. I am still working on the recipe so people who actually have a sweet tooth can enjoy it as well. I just had to share something with you though because it was oh so good. :)
Baby kale and romaine massaged with lemon juice, sea salt and olive oil. Chickpeas, sugar snap peas, purple onion, black pepper, avocado. :)
Drunch:
- egg + whites scrambled with peas then topped with dried basil and a little parmesan
- Kale massage with sea salt and lemon. Mixed with some avocado and chopped apple.
Good morning!
Today I awakened to discover I was out of oatmeal (how tragic). Luckily, I whipped this up instead. I must must say it was even better than my usual oatmeal creations. Just don’t go telling Mr. Oat, breakfast foods tend to get rather jealous of one another.
It consisted of: A toasted ezekiel cinnamon-rasin english muffin, almond butter, banana, apple, raisins, and lots of coffee :)
Lunch=
salad consisting of: baby romaine lettuce, baby kale, homemade vinaigrette, shredded carrot, bell pepper, tomato, cucumber,purple onion,chickpeas, avocado

Happy mother’s day!
This year I kept things really simple and made my mommy breakfast… okay I only made her pancakes. I did this for two reasons:
- I am extremely broke and tend to do things last minute.
- I mean come on, who doesn’t love pancakes?
They turned out magnificent. Here’s a direct quote from when my mum first stepped into the kitchen this morning-> “Those smell the way doughnuts taste.”
Oh, and they just happened to be vegan, whole grain, and made with whole food fabulous-ness. Here’s the recipe:
what you need:
- 1 1/3 c. stone ground whole wheat flour
- a hardy pinch of sea salt
- 1 t. cinnamon
- 1 T baking powder
- 1 1/4 c. unsweetened soy milk
- 1/3 c. H2O
- 2 T. extra virgin olive oil
- 2 T. raw honey
- 1 t. vanilla extract
what you do:
- Dump all dry ingredients in a big bowl and whisk together
- Add in wet ingredients and whisk again
- Heat up a large skillet on medium heat
- Let is sit for a minute or two then coat with a tiny amount of oil
- Pancakatize
- Consume
I had mine with peanut butter, fuji apple and raw honey :)
They were sooooo good. I hope your mommy loves them as much as mine did!

Afternoon tea=
greek yogurt mixed with vanilla and stevia, cinnamon puffins, apple, blackberries, tazo refresh.
Currently sitting on the couch, eating massive amounts of carrot sticks with peanut butter while catching up on new girl.
I should really try to sleep tonight, haha.
Dinner :)
Whole wheat linguini with sautéed purple onion, spinach, and tomatoes in a balsamic sauce. Homemade baked tofu balls.
Dinner. It was really, really, really good. Oh avocados how I love thee.
Breakfast=

I seriously think this is the best French toast I have ever made. It was so simple and dense and cinnamony.
I had it with:
sunflower butter, vanilla bean greek yogurt, chopped apple, and raisins. Oh, and of course I had coffee because I will spontaneously combust if I go more than 24 hours without it in my system.
